Foreign Ed’s Bean Salad

Foreign Ed’s Bean Salad is my fathers creation and I’ve eaten this with him ever since I can remember. It is so easy to make and SO GOOD!

A simple dish loaded with the high-fiber black bean legume, tomatoes, and onions. He knows when I am coming to visit that he better have a huge cold bowl of this waiting! We usually make this ’by eye’ at home but we have portioned it out to make it easier for you first timers.

3 ingredients, plus seasoning!

Foreign Ed’s Bean Salad: Serves 3

  • (1) 30 Ounce Can of Black Beans

  • (1) Red Onion or Vidalia Onion (The Vidalia makes it a little less sharp)

  • (6) Plum Tomatoes

  • (1) TBSP Dried or (2) TBSP Fresh Oregano

  • (1) TBSP Dried or (2) TBSP Fresh Parsley

  • (2) TBSP Olive Oil (I like to put very little oil in my dishes, organic or not)

  • 1/4 Cup White Wine Vinegar

  • (2) TSP Himalayan Pink Salt (more to your liking)

  • Hot Sauce* – The key ingredient here, add to your liking & note that a little goes a long way! Start with simply 1 tsp. (I use Franks when making, my Brazilian dad uses his homemade hot sauce, naturally..)

Directions:

  • Toss all together in a large bowl & mix.

  • Leave in refrigerator for 30 minutes to allow the flavors to develop!

  • & Enjoy.
