Creamy Kale Caesar

Kicking off the launch of my new website and it’s PlantSlant blog with the one and only Creamy Kale Caesar recipe!

The Creamy Kale Caesar is a spin on the traditional Caesar salad with an anchovy, egg, and dairy-free dressing that is my absolute favorite. Recipe shared by a girlfriend years back and since tailored into my own. The creamy kale caesar is loved by all of those that follow me over on Instagram @aTayloredHealth! It’s crazy DELICIOUS. My toddler is obsessed and helps me make it before gobbling it all up (perfect sensory activity for your young kiddos, btw).

You can also use this dressing as a spread on wraps or for dipping crudités! I massage it over 1 bunch of organic kale with my favorite croutons and add some capers!

Ingredients:

1 Small Head Organic Kale

Capers

Croutons (I love Kelly’s)

Dressing:

1/2 cup water (more if you prefer a thinner consistency)
1 cup cashews
3 Tbsp EVOO (use organic and cold pressed)
1 large Lemon, Juiced
2 cloves garlic smashed
2 Tsp Salt
Fresh Ground Pepper
2 Tbsp nutritional yeast (optional)

Blend all ingredients in nutribullet until smooth! If you don’t have a nutribullet or high speed blender soak your cashews overnight.

Double this recipe for a group size salad!
