Foreign Ed’s Bean Salad is my fathers creation and I’ve eaten this with him ever since I can remember. It is so easy to make and SO GOOD!
A simple dish loaded with the high-fiber black bean legume, tomatoes, and onions. He knows when I am coming to visit that he better have a huge cold bowl of this waiting! We usually make this ’by eye’ at home but we have portioned it out to make it easier for you first timers.
3 ingredients, plus seasoning!
Foreign Ed’s Bean Salad: Serves 3

(1) 30 Ounce Can of Black Beans

(1) Red Onion or Vidalia Onion (The Vidalia makes it a little less sharp)

(6) Plum Tomatoes

(1) TBSP Dried or (2) TBSP Fresh Oregano

(1) TBSP Dried or (2) TBSP Fresh Parsley

(2) TBSP Olive Oil (I like to put very little oil in my dishes, organic or not)

1/4 Cup White Wine Vinegar

(2) TSP Himalayan Pink Salt (more to your liking)

Hot Sauce* – The key ingredient here, add to your liking & note that a little goes a long way! Start with simply 1 tsp. (I use Franks when making, my Brazilian dad uses his homemade hot sauce, naturally..)
Directions:

Toss all together in a large bowl & mix.

Leave in refrigerator for 30 minutes to allow the flavors to develop!
